Zero if you actually want something you can hold and play with. I have seen some hamsters actually tolerate (possibly enjoy) being held without biting, but not many. Rats are by far the best rodent pets.

To answer your question, It depends on the type of hamster... if its a Syrian (the larger hamsters) get ONE as they tend to not make good cage mates... if its Dwarf I personally would get two they tend to be more social just make sure they are the same gender! but if you are looking for one to hold get a baby... and try to socialize it but make sure that you understand some hamsters are just not people friendly....
