Lentil sprouts are they safe for uro’s to eat?

I went to soak some beans the other day and I forgot about them. I went back two days later a they had sprouted. So I let them grow and they have become a great green plant. Are they safe? I did some research and this is what I found
Nutritional info:
Vitamins A, B, C and E
Calcium, Iron, Phosphorus
Protein: 25%
This is human info I would assume If the bean is OK for them to eat the plant would also be fine but just want to get feedback before I try them

The nutritional information looks allright. Lentils are always pretty vitamin packed, they’re also very protien packed though so it’s probably better to serve it as a treat, not as an everyday food.

The green part of the plant and the underground portion of the lentil may differ in the protein content. What you found online was most likely for the "legume" as I suspect very very few people eat the sprouted plant.
